There’s a chill in the air and leaves on the ground and Thanksgiving is around the corner.  It’s the time of year when we gather around with friends and family.  Preparing the meal or bringing a dish can be stressful but doesn’t have to be!  Here’s an easy to make ahead of time fresh, cranberry side dish that’s sure to impress.  In fact many consider cranberries to be a super-food since it’s rich in antioxidants, lower in carbs and high protein.  So ditch the canned cranberries and make this quick and easy recipe.

Ingredients
1 (12 oz) bag fresh cranberries (about 3 cups)
⅓ cup orange juice (bottled or freshly squeezed)
⅔ cup water
½ cup granulated sugar, cane sugar or raw sugar
1 teaspoon grated fresh ginger
Garnish, Orange strips
In a sauce pan over medium high heat, add the cranberries, orange juice, water sugar and ginger.  Bring to a boil, stirring occasionally until the cranberries have burst and the sauce has thickened slightly. You don’t want the cranberries to cook down to a completely mushy texture, you want them to be able to see the burst cranberries.  This will take about 15 minutes, you want the sauce to coat the back of a spoon.
When cooled, put in a bowl and garnish with the orange strip.
