Happy Labor Day!

It's the "unofficial" end of summer this Labor Day Weekend, but that doesn't mean outdoor living has to end! If you are grilling this weekend, why not keep it on the lighter side and put some veggies on the grill.  Kebabs of fresh veggies make for a great way to enjoy summer's bounty of fresh vegetables either as a side to bbq'd meats or as a main course to go with a fresh salad.  Dress your veggie kebabs with an Argentine favorite chimichurri and by the way you can add this to your salad dressing as well!  Here's an easy and authentic recipe:

1 cup fresh flat-leaf parsley leaves
½ cup extra-virgin olive oil
¼ cup red wine vinegar (or white wine vinegar for a brighter flavor)
3–4 cloves garlic, minced
½ teaspoon dried oregano
½ teaspoon kosher salt, or to taste
¼ teaspoon red pepper flakes, or to taste
