Whether you are having a Friendsgiving or Thanksgiving, here's an easy to make light, side dish recipe using seasonal ingredients, for your holiday menu, and it pairs well with all of our Osmosis Wines for a DeLightFul meal!
SQUASH SALAD WITH PEARS AND GREENS
1 1/2 Pounds Butternut Squash, peeled and cubed
2 Pears, sliced thin
5 ounces Arugula, Lettuce and or Spinach
1/2 Cup Toasted Walnuts
1/4 Cup Apple Cider Vinegar
1/2 Cup Extra Virgin Olive Oil
1 Tablespoon Dijon Mustard
1 Teaspoon Honey or Maple Syrup
Salt & Pepper to taste
- Preheat oven to 400F, roast squash until fork tender, about 30-40 minutes
- Slice the pears thinly
- When squash has cooled, place squash and pears on a bed of greens, sprinkle the walnuts.
- Make the dressing - in a small bowl add the dijon mustard, honey or maple syrup and vinegar, mix together and add the oil until blended, season with salt and pepper then drizzle over the salad.
