Harvest Season - The Journey To Being Osmosis

Summer has turned to fall and the Osmosis team is busy harvesting grapes. The earliest to ripen and first to be picked is Sauvignon Blanc. Our estate-grown fruit is picked by hand, collected in baskets and taken to the winery, where they will become Osmosis! To naturally preserve the aromas, low sugar and low alcohol in the wine, we harvest our Sauvignon Blanc at three strategic times. The first harvest keeps the alcohol low and the acidity bright; the second harvest gives us the citrus notes and the third the tropical notes.

The process continues at the winery where the grapes are hand sorted and sent up the conveyor belt into the crusher where they are destemmed and lightly crushed.  Afterwards, they are gently pressed to extract the juice, also known as “must”.  The must then flows into the fermentation tanks where, over time, it turns into wine!  The process is completed after fermentation when the wine is clarified and bottled. All that’s left after that is to enjoy!
